Recipe: Sugar Cookies with Icing

I used a recipe from Baked Bree for this, but halved the portions. Even then, it was enough to split into two batches. Each batch yields about 2-3 dozen cookies, depending on size.


1 cup or 225gm softened unsalted butter
1 ½ cups sugar
2 eggs
½ tbsp vanilla extract
3 ½ cups flour
1 tsp baking powder
½ teaspoon salt


1. Cream together the butter and sugar until it is really light and fluffy. Add the eggs and the vanilla and butter extracts. Add the dry ingredients and mix until well.

2. Wrap the dough in plastic wrap and chill for at least 3-4 hours or overnight.

3. Roll the dough out and cut using your favorite cookie cutter.

4. Bake the cookies at 175°C oven for 8-10 minutes. Do not brown the edges. Cool before frosting.

For the glaze:

Mix 1 cup of icing sugar with 2 tbsp of mik or water and 1 tbsp of light corn syrup. Half a teaspoon of vanilla essence is optional. Add the water/milk slowly, as a few drops make a big difference to the right consistency.

Add any gel colouring of your choice and spread thinly on the cookies. Leave to dry for a couple of hours.
